The infrastructure begins with a transformation core.

It is not just a kitchen.
It is the place where product enters the system.

Here, product can be received, read, transformed, preserved, documented and turned into experience, elaboration, knowledge or shared value.

This core will allow ArKé to create its cuisine, develop its own products, test techniques, activate workshops and open processes with producers who need to transform, explain or extend the value of their product.

It is not an auxiliary room.
It is the piece that allows ArKé to be restaurant, experience, research and territorial infrastructure at the same time.

Transition is not a discourse.
It is a capacity.

Mountain cuisine cannot face the future through narrative alone.
It needs tools, criteria, training, networks and operational capacity.

Climate, seasons, costs, consumption habits, regulations and the way people decide what they eat are changing. Yet many structures in the sector still operate as if territory were stable, product infinite and knowledge always transmissible.

ArKé exists to work on that point of friction.

We do not want to use sustainability as a label.
We want to turn it into concrete decisions:

what is preserved,

Territory is not a landscape.

ArKé is born in the Pyrenees because here the mountain is not an image: it is cold, altitude, cycles, crafts, product, memory and decisions that affect what can be grown, preserved, transformed and cooked.

Working with territory does not mean describing it.
It means respecting it, listening to the people who sustain it, understanding product in context and creating real synergies between cuisine, production, knowledge and living landscape.

Respect does not mean idealising territory. It means working with it without emptying it of meaning.

Every product carries a story of climate, craft, time and risk. Every producer sustains a part of the story that cuisine cannot invent. Every gastronomic decision can help retain value or let it leave.
